Sunshine and iced coffee.

We’ve all had a taste of summer today in London – the sun was shining, everyone was smiling and all the radiators were switched off. I’ve had another lovely day on holiday-at-home with my friend Izzy, going to yoga, walking along the river, drinking iced Monmouth coffee and then having a ‘ladies lunch’.

‘Ladies healthy lunch for spring days’

Sourdough bread, fresh.

Hummus, snaffled from the fridge.

Smoked Mackerel, torn into pieces.

Cooked beetroot, chopped into cubes.

Cherry tomatoes, sliced in half and then grilled with some olive oil, salt and rosemary.

Throw everything together, serve with the bread and hummus. Enjoy in the garden whilst talking about what a nice day it is over and over again. Drink something from a wine glass at the same time, try not to get grit in your food from your dirty garden.
